Homemade Chicken Patties


My weird thought process:

Don’t ask me why I sometimes feel the urge to stress that recipes are ‘homemade’. There are lots of reasons.

This chicken mixture is extremely versatile. You can form them into patties for burgers, in a pita, in a wrap, patties to cook and cut into strips for a stir-fry, patties wrapped in lettuce, you can form them into meatballs, etc. etc. etc.

I should start a category under my Recipes list called ‘Candy makes sh*t up’. But then I always wonder if I really did make it up, or if someone out there is making the same exact thing as me and calling it their own. And if so, who really cares? I still think I made it up. I really doubt there are trademarks or copyrights on things, especially if you’re using fresh ingredients.

Most of the time, I’m not sitting around looking at the ceiling chewing on the tip of my pen pondering what to write for my blog. Surprise surprise! But I am daydreaming about food all day. And usually whatever things that pop up in my head that make me salivate, I put together for dinner. Like chicken raspberry ginger chives garlic.

Ewwww, what?! Chicken with raspberries? Who the heck would’ve came up with that one??

And then I usually salivate thinking about things fried in oil that are crispy. So the last ingredient I daydream about is panko bread crumbs fried in oil. Mmmmmm.

And then it all comes together very simply. Process chicken, flavor it with cooked chives, ginger and garlic, form into patties (held together with an egg + breadcrumbs), cover it in Panko bread crumbs, pan fry it to get the outside golden and crispy, bake it in the oven until done, then drizzle raspberry sauce over it to eat.

Please tell me you all go through a similar thought process when you daydream about food.

I was asked numerous times to try to come up with recipes that are of interest to the mass public. I will never ever do that. Sorry. Sometimes it does work out that way though, coincidentally my brain is interested in the trends at times. But my belly isn’t interested in the trends! And I have no theme! My belly isn’t interested in that either! And if I had to have a theme it would be something like it’s my party and I can cook what I want to, cook what I want to, cook what I want tooooooooooooo!

And belly says raspberry sauce isn’t just for desserts.

Homemade Chicken Patties with Chives, Ginger and Garlic (makes 4 patties)

  • 2 chicken breasts, cut into small cubes
  • 1/2 cup Italian bread crumbs
  • 1 egg
  • 1 cup chopped Chinese chives (or 1/2 cup ordinary chives)
  • 1 tbsp. ginger, minced
  • 1 tbsp. garlic, minced
  • 1/4 tsp. salt
  • pinch of pepper
  • 1/2 cup Panko bread crumbs
  • oil

Sauce (optional):


1) Preheat oven at 350 degrees. Put chicken cubes into food processor. Process until it can be formed into patties, meatballs, etc.

2) Pour a tsp. of oil in a small pot heated on medium high. Add chives, ginger and garlic. Cook for 3-4 minutes. Set aside.

3) In a large bowl, mix chicken, chive mixture, Italian bread crumbs, egg, salt and pepper. Form into patties. Press patties (or roll meatballs) in a plate of panko bread crumbs.

4) Pour 1-2 Tbsp. oil in a large skillet, heat on medium high. Brown both sides of the chicken patties until golden, set aside on baking dish. Bake patties for 25 minutes. If baking meatballs, bake for 20 minutes.


Cut chicken breasts into small cubes.

Chop chives, garlic and ginger. I used Chinese chives, because my mom gave me a large bag full of them.

Cook chive mixture and process chicken.

Put all ingredients together except Panko bread crumbs.

Form into patties and cover both sides with Panko bread crumbs.

Pan fry both sides until golden, set aside on baking sheet/dish.

Bake for 25 minutes. If making meatballs, bake for 20 minutes.

It would’ve been nice to make a burger out of these with some bread, but I am so tired of eating bread. So I just sauteed some greens and ate it with that.

Oh and I drizzled raspberry sauce over the chicken patties. I know it doesn’t look appetizing, but just picture Swedish meatballs with Lingonberry sauce (sweet/savory thing going on). See where I was going with it??? That’s where the craving was coming from!

  • I only browned both sides on the skillet to get that crunchy texture, then I baked it to cook the chicken all the way through.

  • I love chicken patties. I usually make them with green onions, but chives must go well with them too. And I happen to have lots of chives and berries right now, so I guess I’ll be having them for lunch tomorrow!

  • I so relate to your thinking about food! Just the way I create and I’m always amazed that when I think I’ve created something original, I can usually find something pretty similar that someone else has thought of as well. I think it must be similar to how people who lived on opposite sides of the world basically came up with the same methods to advance technology.
    So regarding your raspberry, chicken idea for patties, just had to let you know that I was craving a strawberry chicken salad for dinner, but my husband doesn’t really consider that a dinner. So I was thinking if I used veggies and chicken and made a pattie out of it and topped it with pureed strawberries (we have an abundance of strawberries right now that I froze) that should satisfy both our cravings as he loves grilled patties of any kind. I make them low carb so instead of panko bread crumbs I use ground nuts for my binding agent. But before I add the recipe to my recipe book I’m comprising I always check online to see if anyone else has a similar idea. And then I found your chicken raspberry sauce recipe. Love it. Great cooks think alike!

  • My husband just reminded me that he used to love Monte Cristo sandwiches (back when he could eat bread and powdered sugar) dipped in strawberry sauce and the chicken patties reminded him of that combo too!
