Raspberry swirl mini-cheesecakes
People have asked me if I post every single meal that I make. The answer is NO. I mean, I have a life. Ok I lied, I don’t. But I still do not post every single meal I make! I wish I did, because it would make me a much more prolific writer. But apparently I already look like I am prolific. If you do the math, assuming that I eat 3 meals a day, 7 days a week, that is 21 meals a week. And I don’t post 21 meals a week, right? And according to my very basic math skills, that would mean I post very very little compared to what I could be posting.
The thing is, I don’t think I post enough. I spend so much time editing photos on Photoshop all day trying to sell them and make a living that I only work on this blog 1 hour or less a day. 2 hours for the really big posts (like the NYC restaurant reviews). So if people think I blog all day, they are dead wrong. I wish I was playing around with this blog all day. I mean, I twitter, check my farm on Farmville on Facebook, check my comments on Soupbelly, salivate over food photos on foodgawker, tastespotting and photograzing, and read everyone else’s blogs all day. Don’t you, when you’re working?
The following photos are things that have slipped through the cracks, recipes I haven’t gotten around to posting (and probably never will), photos of everyday meals I whipped up, and things that I wasn’t 100% confident in posting (because I forgot to write the recipe down). All due to laziness.
There are a lot more photos than what I am posting here, but I’m not posting all of them, because that would require more work. And I said I was lazy! Why don’t you believe me, people?!
Eggplant Parm (pan-fried with Panko bread crumbs and then baked with tomato sauce and parmesan)
Oatmeal with mango and honey
I’m guessing grilled chicken salad with some bread?
Spaghetti and meatballs with raw tomato sauce, basil and mozzarella
Peach, blueberry and blackberry crumble with a side of ice cream
Tomatoes stuffed with sausage, tomatoes, bread crumbs and cheese
If you would like me to make any of these recipes, please leave me a comment. I will try to make it again, write the recipes down, and post photos for instructions.
For now, I’m going to finish my rum and coke and watch some TV….
p.s. Feel free to leave me a rant on my comments section, or on e-mail, about how your friends and family think you have no life or job because you seem to blog all day. So I can relate and feel less like a loser.

I think you’re prolific. You seem to post something every day. I tend not to read blogs for more than 3 minutes on my work computer because of the nature of my job. But I do check twitter and the like on my iPhone.
Irish Pirate – Reading blogs sure beats reading CNN! Before I knew blogging ever existed (pre-april ’09) all I read was the NYT and CNN. It was pretty depressing.
Kier – I’m so flattered you neglected your children for my blog. :P I’ll get around to that crumble recipe. Just gotta make sure it really IS a crumble…
Hummingbird – I’m starting to think I have ADHD or whatever it is. I have to multi-task or else I get bored. If I work, I have to constantly check twitter, check facebook, read other blogs in between what I’m doing, read the news, etc. If I’m forced to do one task alone, I get sleepy. And I constantly need music blaring in my ipod, radio, or itunes on my computer. If I don’t have music, my brain stops.
Your job probably doesn’t let you get bored, or it doesn’t seem to get boring, which is good. :)
Candy, it’s funny that you wrote a post about being prolific… I was just thinking about that yesterday. I’m not very disciplined and this is not my first attempt at blogging. So a while ago I decided to post every day once a day from Monday to Friday and take the weekend off… but now I’m actually thinking of posting on weekends as well, if I have time (which I almost always have). I use my own laptop both at home and work and I multitask just like you do… Twitter, Facebook (both personal and work profiles), I write, I blog, I read other people’s blog… no wonder I’m tired at night!!!
I must say that I understand and have the same problem… While I enjoy blogging (very much), I also find it enjoyable sometimes to just cook without worrying about taking pictures or writing down what I’m doing! Until someone decides to pay me for my recipes or my writing, I’m afraid I’m stuck working and therefore only posting a few recipes a week… and multitasking to keep up with twitter, blogs, facebook, and other foodie sites in between working, cooking, and trying to have a life!
Chiara – You still have my dream job. And you post quite a lot on top of my dream job. It’s amazing that you are able to write so much! I post on the weekends when I feel like it…most of the time I don’t think I do. Unless I have something to say. I feel bad that I don’t comment on everyone else’s blog as much as I should too. There’s not enough time!!
Jen – Last night, I had everything planned out for a post, with my camera out on the table. But I was just so darn tired I wanted to cook and get it over with. And I feel bad not following through with the camera each time I cook something now! There needs to be a balance for us food bloggers…we need to keep it fun to cook. One day, we’ll burn out, and never want to take pictures of food again. :)

Cynthia – I should make those cheesecakes again. That was a recipe that tasted good, but had a hard time coming off the cupcake liners. Once again, not a baker :)
