Quick, healthy and easy dinner within 30 minutes. Wow that sounded cheesy. This is my last Saucy Mama contest entry. It is broiled tilapia with lime chipotle marinade, served with a side of nectarine salsa, and sautéed zucchini. Just to warn you – this fish has some heat. The marinade gets into the fish easily as opposed to other meats such as poultry or pork. So 15-20 minutes of marinating in the fridge will be more than enough to give the tilapia it’s hotness. 

Broiled Tilapia with Lime Chipotle Marinade (serves 4)

Ingredients for Fish: 

Nectarine Salsa: 

  • 2 ripe nectarines, diced
  • 1/4 onion, minced
  • 1 Serrano pepper, minced with seeds
  • 1/4 lemon (or lime), juiced
  • 2 Tbsp. cilantro, chopped

Sautéed Zucchini: 

  • 2 medium zucchini, cut into cubes
  • 1 tbsp. butter
  • salt
  • pepper

Directions: 

1) Set oven to broil on high. Marinade fish, coating both sides of each fillet evenly, for 15-20 minutes, and place in refrigerator until ready to broil. 

2) Make salsa by mixing ingredients together and setting in fridge until ready to use. 

3) When fish is ready, place on aluminum foil lined baking pan (trust me, it’ll be easier to clean later). Place on topmost rack in oven, broil for approx. 10 minutes, watching carefully. 

4) As fish is broiling, put 1 tbsp. butter onto a skillet heated on medium high. When butter has melted, put zucchini onto skillet. Sauté until tender. Salt and pepper to taste. 

5) Fish is ready when it is flaky and white. Serve with nectarine salsa, and a side of zucchini.

  4. I make a very similar peach salsa, except I use red onions and add a little honey. Anyway, great meal!
