		<description>[...] Chocolate and Coconut Pancakes (makes approx. 16 pancakes) Ingredients: 2 cups flour 2 1/2 tsp. baking powder 3 Tbsp. granulated sugar 1/2 tsp. salt 2 large eggs 1 1/2 cups milk 2 Tbsp. melted butter coconut flakes chocolate chips *blueberries if you’re feelin’ adventurous Directions: 1) Sift together flour, baking powder, sugar and salt. In a separate bowl, whisk together eggs and milk. Combine the two bowls of ingredients together, blend with melted butter. If the batter is too thick to pour, add 1/4 cup more milk. Whisk until lumps disappear. 2) Heat a greased griddle on medium heat. Pour about 1/4 cup of batter for each pancake. Add coconut flakes and chocolate chips onto each pancake, and cook until bubbles appear. Flip pancake over, cook until golden brown on both sides and coconut is toasted. Jen - When the weather gets colder I always want to make things like this...full of carbs and such. It sure hits the spot.

Chiara - I&#039;m still cleaning out my pantry and freezer. Fridge is almost completely cleared out except for the condiments. Well, the ones that haven&#039;t expired yet...</description>
