Individual miniature apple pies help with portion control. The only flaw in this method is if you eat 3 or 4 of them.
I also cheated and used a package of pie crusts. You can do the same, or make your own.
I’m not particularly wordy today, due to some unknown allergy my eyes are swollen half shut and I need to get outta the house soon.
Oh, and take a look at my new site at smugmug. There is a link you can click on my sidebar labeled ‘Soupbelly Prints!’ It’s for all the readers who want to look at photo after photo after photo after photo. Check it out and lemme know what you think. I will be adding to it regularly.
Miniature Apple Pies (makes 8)
Ingredients:
-
1 package of pre-made pie crust dough
-
2 large apples, peeled and chopped into small pieces
-
1/3 cup brown sugar
-
1/2 tsp. nutmeg
-
1 tsp. cinnamon
-
2 Tbsp. flour
-
salt
-
muffin pan
Directions:
1) Preheat oven to 345 degrees. In a bowl, combine apple pieces, brown sugar, nutmeg, cinnamon, flour and a sprinkle of salt.
2) Cut pie dough into circles, using a glass or even just a knife. Place dough into muffin pan (ungreased). This part will feel tricky, but don’t worry about how messy it looks. Patch up any holes with extra dough. No one will know.
3) Scoop apples into each pie. Cover pie with strips using a lattice pattern, or just use another circle of dough with holes pierced through for venting. Bake for approx. 35 minutes. Sprinkle with powdered sugar, serve with vanilla ice cream.

Preheat oven to 345 degrees.
Chop apples into small pieces, as seen below.
In a bowl, combine apple pieces, brown sugar, nutmeg, cinnamon, flour and a sprinkle of salt.
Cut pie dough into circles, using a glass or even just a knife.
Place dough into muffin pan (ungreased). This part will feel tricky, but don’t worry about how messy it looks. Patch up any holes with extra dough. No one will know.
Scoop apples into each pie. I know my recipe calls for making 8 pies, and I’m showing 10 or 11, but that’s because I can’t count. 8 should be fine.
Cover pie with strips using a lattice pattern, or just use another circle of dough with holes pierced through for venting.
Bake for approx. 35 minutes or until crust is browned.
Sprinkle with powdered sugar. Set on cooling racks.
And serve with vanilla ice cream.
So cute! They look delicious. I’d be the guilty party who would eat 3 of them in one sitting. Good food is hard to pass up!
Brie – The ironic thing is when I make them look so small and cute, it makes me want to eat MORE of them. I just can’t trick myself :P
Love the mini-pies… They are fantastic! I have a bunch of apples sitting on my countertop… I just need to find someone to give half of the pies to, otherwise I will probably eat half a dozen. Love the photo site, too… Your photos are beautiful!
These are so cute, and very nicely done!
oh i DO love the new banner, it’s all a bit Dexter, isn’t it?!
Those are so cute… I have a few apples left from my apple week on my blog, so this might be a winner! Thanks for the inspiration!
Jen – Thank you very much! I froze the extra pies in zip lock bags. Hopefully they will last…
Jodi – Thank you!
Projectivist – It IS Dexter-ish, isn’t it? I figured I go all blood and gore and not cutesy pumpkins for the holiday…
I need one wrapped to go, please. They make such perfect take-alongs.
ohhhh!!! they look sooo cute candy!! my daughter vud love it! m sure! :)
those are absolutely adorable! and they look so easy! i’ll have to try them with our apple tree’s apples this weekend. THANK YOU, candy! :)
Catalina – Just pop one into a sandwich bag for a lunch :)
Nora – Thanks!
Katherine – You’re welcome! I think they were pretty easy. I made it harder on myself with the lattice pattern, but I think they looked cuter that way.

Hello from Russia!
Can I quote a post in your blog with the link to you?
i’ve made pies long ago with rum or whiskey, with the apples cooked down prior to baking. would that work with these? i want to scale down the size, but maintain that ‘umphf’.
Well…I went searching online for mini pies…just to make sure it wasn’t too complicated. I’m so glad I found your site! I just ate one! lol Needless to say I used the ready made crusts and followed the rest as you directed. Yummy! What fun. Thanks Candy, and am enjoying browsing through your site! :o)

Hey there, great post, a colleague in the fashion sector linked me to your web page. I am a recent graduate of the Fashion Institute of Technology in New York and am now currently doing work using a discussion board to bring all business professionals together. You gave me some excellent ideas for my own internet site.
I just made these and found them to be incredibly dry. What did I do wrong?? :( The flavor profile is good – you can tell, but mine are just so dry. Too much flour maybe?
