Miniature Apple Pies

Individual miniature apple pies help with portion control. The only flaw in this method is if you eat 3 or 4 of them.

I also cheated and used a package of pie crusts. You can do the same, or make your own.

I’m not particularly wordy today, due to some unknown allergy my eyes are swollen half shut and I need to get outta the house soon.

Miniature Apple Pies (makes 8)

Ingredients:

  • 1 package of pre-made pie crust dough
  • 2 large apples, peeled and chopped into small pieces
  • 1/3 cup brown sugar
  • 1/2 tsp. nutmeg
  • 1 tsp. cinnamon
  • 2 Tbsp. flour
  • salt
  • muffin pan

Directions:

1) Preheat oven to 345 degrees. In a bowl, combine apple pieces, brown sugar, nutmeg, cinnamon, flour and a sprinkle of salt.

2) Cut pie dough into circles, using a glass or even just a knife. Place dough into muffin pan (ungreased). This part will feel tricky, but don’t worry about how messy it looks. Patch up any holes with extra dough. No one will know.

3) Scoop apples into each pie. Cover pie with strips using a lattice pattern, or just use another circle of dough with holes pierced through for venting. Bake for approx. 35 minutes. Sprinkle with powdered sugar, serve with vanilla ice cream.

Scoop apples into each pie. I know my recipe calls for making 8 pies, and I’m showing 10 or 11, but that’s because I can’t count. 8 should be fine.
