Norbitonite - Thank you for the helpful info! I have to try this in a chicken sandwich now. I haven't stopped thinking about it since Irish Pirate's comment! And the mango chutney sounds delicious in it!

Danielle - Thank you!

There's nothing like a hard boiled egg to quiet a rumbling tummy! I can't wait to try this dressing, it looks great.

Yes, in England we call cooked chicken in a dressing like this 'Coronation Chicken', as it was a recipe devised for our Queen's coronation in 1953. It is delicious as a sandwich or in salad. I like the sound of it with hard-boiled egg and salad. It would also be good with spinach instead of the romaine.

If you want to make a slightly less healthy version (!), scatter with toasted almonds and/or stir in a tablespoon or two of mango chutney - or some diced fresh mango.

Yummy.

oneshotbeyond - Thank you very much!

Irish Pirate - Good idea....thinking of using it on sandwiches now.

Lissa - Good luck with the dieting! I never want to eat like I'm on a diet. So I try to trick myself with stuff like this :P

I completely agree with your comments on weight and food. I love food and struggle with how to enjoy while being healthy. I have committed to losing some poundage this year and I'm excited to try this dressing. I love curry and I never thought to put it in a dressing!

They had a dressing very similar to this in Denmark - they would eat it all the time with their chicken sandwiches. It was very delicious :)
