I had this sudden urge to get cinnamon into my mouth and into my stomach fast. I thought of cinnamon buns, sugar cookies with cinnamon and sugar sprinkled on top, apple pie with cinnamon, apple strudel, etc. until eventually I settled on a fast and easy recipe of Coffeecake.

In the 9th grade, we were forced to take Home Economics class, where we were taught to sew buttons, stuffed animals, wash dishes, do laundry, iron, and cook. I ended up with a C+ in the class because I couldn’t sew for my life. I also washed the dishes ‘wrong’, because I wasted too much water. Luckily the one thing that saved me was the cooking. Aside from the cooking, I wasn’t a very domestic person.

We were also forced to write a paper about how we wanted (or expected ?) our lives to be when we were 30. I thought it’d be funny to say that I would end up with 1.5 kids, a dog, a house, divorced with a successful job while the other girls wrote about what their dream house and dream husband looked like. My teacher didn’t think I was funny. I think she hated me.

Back to coffeecake…we had to make coffeecake as our first recipe. She told us that back in the old days, when you used up the coffee tins you would pour cake batter into those tins and bake them. Of course, I’m not showing you how to make it that way, because it’s been 16 years and I’m not sure if I’m even remembering the story correctly. So this whole story was a waste of time.

Coffeecake

Topping Ingredients:

  • 1/2 cup brown sugar
  • 1/4 cup all purpose flour
  • 1/4 butter
  • 1 tsp. cinnamon

Cake Ingredients:

  • 1 1/2 cups all purpose flour
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 egg
  • 3/4 cup sugar
  • 1/3 cup melted butter
  • 1/2 cup milk
  • 1 tsp. vanilla extract

*Powdered sugar optional

Directions:

1) In a bowl, combine topping ingredients, crumbling butter with a fork. Set aside.

2) Combine flour, baking powder and salt in a bowl. In another bowl, beat egg, sugar and melted butter together. Add milk and vanilla. Stir in flour mixture and mix well.

3) Pour batter into a greased and floured 8 or 9 inch cake pan. Sprinkle topping on top. Bake at 375 degrees for 25 minutes, or until cake is done (check by sticking toothpick in center of cake, if it comes out clean it’s done). Sprinkled powdered sugar over top (optional). Cool and cut into slices. Serve.
