Pico de gallo

Pico de gallo (https://en.wikipedia.org/wiki/Pico_de_gallo) is a refreshing salsa perfect for fish tacos, made with tomatoes, onions and cilantro. According to wikipedia, ‘pico de gallo‘ can be used in much the same way as other Mexican liquid salsas, but since it contains less liquid, it can also be used as a main ingredient in dishes such as tacos and fajitas.”

Salsa Fresca (makes approx 3 cups)


  • 4 tomatoes, diced
  • 2 Tbsp. chopped cilantro
  • 3/4 cup white onion, diced
  • 2 garlic cloves, minced
  • 1 lime, juiced
  • 2 Tbsp. olive oil
  • salt and pepper to taste


1) Blend all ingredients together. Set in fridge for at least 20 minutes before serving pico de gallo to let the flavors meld together.
