Salsa Fresca

A refreshing salsa perfect for fish tacos, made with tomatoes, onions and cilantro.

Salsa Fresca (makes approx 3 cups)

Ingredients:

  • 4 tomatoes, diced
  • 2 Tbsp. chopped cilantro
  • 3/4 cup white onion, diced
  • 2 garlic cloves, minced
  • 1 lime, juiced
  • 2 Tbsp. olive oil
  • salt and pepper to taste

Directions:

1) Blend all ingredients together. Set in fridge for at least 20 minutes before serving to let the flavors meld together.
