Chicken Caprese Panini

Sometimes I want a chicken sandwich. Sometimes I want a caprese salad. And some days I want both. And on those particular days I want both I mash them up together into a panini.

The components for this panini are delicious together and great if you don’t have the traditional prosciutto for this type of panini. Use your favorite seasoning or marinade for the chicken if you’d like, or simple salt and pepper would do.

Chicken Caprese Panini

(makes 2 sandwiches)

Ingredients:

  • 1/2 loaf French bread
  • 1 chicken breast, sliced in half to make 2 thin filets
  • olive oil
  • tomato slices
  • basil leaves
  • mozzarella

Directions:

1) Marinate/season your chicken breasts the way you’€™d like (simple salt and pepper will do too). Pan fry in a couple of teaspoons of olive oil on medium/medium high heat on both sides until cooked. Assemble sandwiches ingredients on French bread and grill on a Panini press until toasted, hot and bubbly. Serve.

Assemble sandwiches ingredients on French bread. I topped the chicken with mozzarella, tomato and basil. An extra drizzle of olive oil doesn’t hurt, either 😉

Grill on a Panini press until toasted, hot and bubbly.
