Chicken Panini

Simple recipes this week.

Chicken Panini

(makes 2 sandwiches)

Ingredients:

  • 1/2 loaf French bread
  • 1 chicken breast, sliced in half to make 2 thin filets
  • olive oil
  • tomato slices
  • basil leaves
  • mozzarella

Directions:

1) Marinate/season your chicken breasts the way you’d like (simple salt and pepper will do too). Pan fry in a couple of teaspoons of olive oil on medium/medium high heat on both sides until cooked. Assemble sandwiches ingredients on French bread and grill on a Panini press until toasted, hot and bubbly. Serve.

Assemble sandwiches ingredients on French bread. I topped the chicken with mozzarella, tomato and basil. An extra drizzle of olive oil doesn’t hurt, either 😉

Grill on a Panini press until toasted, hot and bubbly.
