Here’s the second salmon recipe from that huge chunk of salmon we bought last weekend.
Lemon Dill Grilled Salmon
Ingredients:
- 1 – 1.5 lbs. salmon
- 4 Tbsp. olive oil
- 2 garlic cloves, minced
- 1 Tbsp dill, chopped
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. lemon zest
- 1 Tbsp. chives, chopped
Directions:
1) Mix all ingredients for marinade (olive oil, garlic, dill, salt, pepper, lemon zest and chives). Put salmon in large zip lock bag and pour marinade in, shake to coat well. Marinate for 1-2 hours.
2) When grill is heated, place salmon on and grill for 6-8 minutes per side, or until fish is flaky. Serve with lemon wedges.
