Oven Fried Chicken Drumsticks

Being as I live in the South now, we have a plethora of dining establishments that serve juicy, flavorful golden fried chicken. I can walk out to my local Kroger or Publix and even they make such a great fried chicken that it would put most restaurants up North to shame. People line up at the fried chicken counter at these supermarkets before noon for their batch of freshly fried chicken. It is so good that I sometimes pick up the cold leftover pieces they sell after lunch, heat it up at home and it would be better than anything I would get up North.

Is that going too far? I can’t help it, but I need to tell the truth. No offense to northerners (I was one), but you don’t know what you’re missing.

Rather than frying up a batch of chicken, I have a recipe that only requires you use the oven. No frying in a deep fryer or in a pan. I enjoy doing that too, and fried chicken has it’s own distinct flavor, but this oven fried recipe is so juicy and crispy it can compete with Southern fried chicken without the hassle of deep frying.

I used drumsticks for this recipe but you can use breasts, thighs or a combination of different chicken parts, as the baking time will be the same for all of them. The batter of flour, egg and breadcrumbs create a thick crust that traps the juices from flowing out so it retains moisture until your first bite. But make sure you wait for it to cool down before you chow down, or someone will get burned by chicken juice in the eye.

Oven Fried Chicken Drumsticks

makes 6 drumsticks

Ingredients:

  • 6 drumsticks
  • 2 eggs
  • 1/2 cup flour
  • 1 tsp. salt
  • 1/2 tsp. paprika
  • 1/2 cup bread crumbs
  • 1/4 cup olive oil for drizzling

Instructions:

  1. Preheat oven to 400 degrees. Combine flour, salt and paprika in one dish, egg in another dish, and bread crumbs in the last dish.
  2. Dredge the drumsticks in flour, then egg, and lastly breadcrumbs. Place on a cookie rack above a shallow baking pan lined with foil (for easy cleanup). Drizzle olive oil on both sides of the chicken (don’t worry about covering entire surface of chicken, just a drizzle on both sides will do). Bake uncovered for 45 minutes, turning halfway during the baking process. Cool down for 5-10 minutes before serving.

This is how I normally oven fry things, with a cookie sheet over a baking sheet lined with aluminum foil. The chicken gets crispier because the air is able to circulate around both sides. I still flip halfway so the chicken making contact with the cookie rack is able to crisp up.

Dredge the drumsticks in flour, then egg, and lastly breadcrumbs. Place on a cookie rack above a shallow baking pan lined with foil (for easy cleanup).
