This is one of those non-recipe recipes that I never think are important enough to post, but I’ve been proven wrong many times as to what’s popular and what’s not. I feel like I’ve said this very exact thing on numerous posts but I am very forgetful so maybe after 67 times I’ll accept the fact I should just post everything.
I always opt for the tomato cucumber salad in place of French fries whenever I’m ordering food. I’m crazy about French fries, and it is clearly showing how much I love French fries in a…er…physical way. As I get older, each fry my body consumes pushes it straight to my thighs and stomach, and you can almost see the outlines of the fry shape on my sides, or ‘fry handles’. So I automatically turn them down for a healthier option, and in the south, especially in the summer months, tomato cucumber salad is almost a given.
I’ve added avocado because I like the richness it gives the salad, and contrasts the texture of the crunchy cucumbers. Plus I just love avocados and who needs anymore reason than that?
Instructions with Photos:
I only used roughly 1/4 cup of minced red onion, but if you’re the oniony type be my guest and go crazy with it.
Peel the cucumber skin (see above) so when you cut them, they are easier to eat that way.
Cut cucumber and tomatoes into equal, bite sized pieces. Mince the onion. Add all three ingredients into a large bowl.
Add a few dashes of vinegar,
drizzle some olive oil
and salt and pepper to taste.
Add the avocado cubes in as the last step and gently fold them into the salad.
And that’s it! I eat this as a side dish, or as a topping to a leafy green salad. You can also add cooked cocktail shrimp to make it more filling.
Tomato, Cucumber and Avocado Salad
- 3 large tomatoes, cubed into bite sized pieces
- 2 large cucumbers, cubed into bite sized pieces
- 1/4 cup red onion, minced
- 1 avocado, cubed into bite sized pieces
- olive oil
- Step 1 Combine tomatoes, cucumbers and onion in a large bowl. Add a few dashes of vinegar, drizzle some olive oil and salt and pepper to taste.
- Step 2 Add the avocado cubes in as the last step and gently fold them into the salad.
