Tikka Masala Chicken Skewers with Cilantro Mint Dipping Sauce

Tikka Masala Chicken Skewers with Cilantro Mint Dipping Sauce. Boy what a mouthful. In terms of both the title and actual mouthfuls of tender chicken marinated in spices and dipped in a creamy refreshing sauce.

The marinade is made with a plain Greek yogurt base, infused with an array of spices such as ground coriander, cumin, turmeric, ginger, tomato paste and lime juice. The yogurt and citric acid from the lime juice will tenderize the chicken, which I only marinated 1.5 hours before grilling, so it isn’t necessary to marinate for more than a few hours. I also used chicken thighs so they wouldn’t dry out as much on the grill, but you can use chicken tenderloins if you want white meat instead of dark.

The dipping sauce is also made with plain Greek yogurt, and combined with lime juice, garlic, cilantro and mint. It is extremely refreshing and complements the earthy flavors of the chicken, and we even used it as our dressing when we placed our chunks of chicken over a bed of lettuce.

One more great thing to add is that this marinade is made with yogurt as well as the sauce. The only fat I used is the couple of teaspoons of oil on the grill before cooking. It is one of those dishes that packs a lot of flavor without a lot of fat, and doesn’t leave you feeling heavy after eating.

Tikka Masala Chicken Skewers with Cilantro Mint Yogurt Dipping Sauce

Ingredients
  • 2 lbs. chicken thighs, cut into 1 inch cubes
  • 2 tsp. oil (only if using grill pan)
  • CHICKEN MARINADE:
  • 1/3 cup plain Greek yogurt
  • 1/4 cup lime juice
  • 4 garlic cloves, minced
  • 2 Tbsp. tomato paste
  • 2 tsp. garam masala
  • 1/2 tsp. salt
  • 1 1/2 Tbsp. ground coriander
  • 2 tsp. ground cumin
  • 1 tsp. ground turmeric
  • 1/2 tsp. ground ginger
  • CILANTRO MINT YOGURT DIPPING SAUCE:
  • 1 cup plain Greek yogurt
  • 1/2 lime, juiced
  • 2 garlic cloves, minced
  • 1/4 cup cilantro (stems removed), chopped
  • 2 Tbsp. mint leaves, chopped
  • 1/4 tsp. ground ginger
  • salt to taste
Directions
  • Step 1 In a large bowl, combine all the marinade ingredients together. Add cubed chicken, coat well, cover and set in fridge to marinate for 1-3 hours.
  • Step 2 As chicken is marinating, combine the dipping sauce ingredients in a small bowl. Set in fridge until ready to use.
  • Step 3 Soak wooden skewers in water for at least 30 minutes before grilling. When ready to use, thread 4 – 5 chicken pieces onto each skewer. If the pieces are long or rectangular, thread from one end to another, forming a ‘U’ then stretching out on the skewer.
  • Step 4 If using a grill pan, drizzle 2 tsp. of oil on bottom and heat to medium high heat. Place skewers in the pan and grill 4-6 minutes per side or until chicken is no longer pink. If using a grill, grill for 4-6 minutes per side or until no longer pink.
  • Step 5 Serve with dipping sauce and eat over rice or a salad, or just on its own.
