Apple Streusel Cream Cheese Muffins

Guys…..are you so so so sick of apples yet? I’ve been baking anything I can just to give it away. My husband’s coworkers have been real troopers and eating everything he’s been giving to them. It’s hard work, but they are hard workers. He comes home telling me that they enjoyed it each day. So then I give him another dish. And another. And another. And one day he just took my muffins to work thinking it was for the company, when it was really my breakfast…

I know I know, I didn’t really need 12 muffins for breakfast. But I wish he left me at least one…

Since these muffins are long gone (thanks hubby) I’ll just eat a pint of my homemade applesauce for breakfast.

I love any kind of baked good with cream cheese, and found this great recipe for apple coffee cake with cream cheese. I wanted to make them bite sized so I used a couple of mini muffin pans. The streusel topping completes the whole thing, and keeps the cream cheese insulated and prevents it from drying out too much during baking.

Instead of rambling more here’s a list of words:

I should’ve just said that and be done with it.

I’ve separated the list of ingredients as follows: WET CAKE BATTER, DRY CAKE BATTER, STREUSEL TOPPING, CREAM CHEESE FILLING. When I read a lot of recipes, ingredients are rarely in order of how we use them, and if they are, they aren’t organized enough for me to see all the steps clearly before starting to make them. First I make a bowl of wet cake better, then a separate bowl of dry cake batter. I pour the wet batter into the dry one. I make the streusel topping in a small bowl, and cream cheese filling in another bowl. Then I layer all my ingredients in a muffin pan.

Ingredients
  • WET CAKE BATTER:
  • 1/4 cup butter, softened
  • 3/4 cup light brown sugar
  • 1 large egg
  • 1/2 cup sour cream or Greek yogurt
  • 1 tsp. vanilla
  • DRY CAKE BATTER:
  • 1 cup flour
  • 3/4 tsp. cinnamon
  • 1/2 tsp. baking soda
  • dash of salt
  • 1 1/2 cups apples (chopped into small pieces, and added in AFTER wet and dry batter are combined)
  • CREAM CHEESE FILLING:
  • 8 oz. cream cheese
  • 1 tsp. vanilla
  • 3 Tbsp. granulated sugar
  • STREUSEL TOPPING:
  • 1/4 cup unsalted cold butter, diced
  • 1/4 cup flour
  • 1/4 cup oats
  • 1/2 tsp. baking powder
  • 1/4 cup light brown sugar
  • 1 tsp. cinnamon
Directions
  • Step 1 Line two mini muffin pans with paper liners (approx. 20). Preheat oven to 350 degrees.
  • Step 2 In a large bowl, combine ingredients for wet cake batter. Set aside.
  • Step 3 In another large bowl, combine ingredients for dry cake batter. Pour into wet cake batter and combine. Fold apples in.
  • Step 4 In a medium bowl, combine ingredients for cream cheese filling. Using a handheld mixer, blend cream cheese until creamy.
  • Step 5 In a small bowl, combine ingredients for streusel topping.
  • Step 6 Spoon batter into muffin tins, around 1.5-2 Tbsp. per muffin. Then spoon cream cheese on top, and spread evenly. Sprinkle streusel on top of each muffin. Bake for 30 minutes, then let cool for at least 10 minutes before serving.
